It is made with cocoa butter and chocolate liquor. Cocoa butter is vegetable fat extracted from the cocoa bean. Chocolate liquor consists of pure cocoa mass.
Couverture Chocolate must be tempered or it will bloom (the chocolate will turn white). This type of chocolate is a higher quality chocolate that requires tempering when melting.
